Ingredients
- 1 Large Sprig Spearmint
- .75 oz. Simple Syrup
- 1 oz. Lime Juice
- 2 oz. White Rum
- 3 oz. Sparkling Mineral Water

Directions
Gently muddle the spearmint sprig and syrup in a 16 oz mixing glass. Add the lime juice, rum, and mineral water with the spent lime hull for garnishment. Fill with crushed ice and stir until drink is combined and glass is frosty.

- 3 parts Club Soda
- 12 mint leaves
- 1/2 Lime
- 1/2 Part Sugar

Directions
Place 12 mint leaves, 1/2 part sugar, and 1/2 lime in a glass. Muddle well with a pestile. Add rum, top off with club soda, stir well and garnish with sprigs of mint or a lime wheel.
Variations
Flavored rums can be used to add a little extra flavor. Substitute Coconut, Apple, Raspberry, Orange, Limon, Peach, or Melon flavored rum for traditional white rum.

Ingredients
- 1 teaspoon powdered sugar
- 2 oz. Squeezed Lime Juice
- 4 mint leaves
- 1 sprig of mint
- 2 oz. Havana Club White Rum
- 2 oz. club soda

Directions
Place the mint leaves into a Collins and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime. Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device pictured below, though you can also use the back of a fork or spoon if one isn't available). Add ice (preferably crushed) then add the rum and stir, and top off with the club soda (you can also stir the club soda in as per your taste). Garnish with a mint sprig.
Variations
While the following isn't the authentic original Bodeguita del Medio Cuban recipe for a mojito, some people will take half of the juiced lime and cut into into four wedges to add to the glass. Another variation is to add Angostura bitters to cut the mojito's sweetness, which is a popular version in Havana hotels although not the true Bodeguita recipe. Some Cubans also use "guarapo" in place of the powdered sugar, which is a sugar cane syrup available in the Latin food section of some supermarkets and definitely in online Latin grocery stores (typically sold in 12 ounce cans just like soft drinks).

- 2 parts Tommy Bahama White Sand Rum
- 1 teaspoon super fine sugar
- Juice from 1 lime
- 1 bunch of fresh mint
- Sparkling soda

- 1 1/2 teaspoons lime peel

- 2 spoons demerara sugar
- 3/4 Sliced Lime
- 8-10 lime leaves
- Light Rum
- 1 large mint leaf or sprig
- Sparkling water

Directions
Add two bar spoons of demerara sugar, three quarters of fresh sliced limes and eight to ten fresh lime leaves to a highball and muddle the contents. Fill glass with crushed ice and then pour in light rum until the glass has only around an inch remaining. Add a full mint leaf (one the length of the glass) and the remaining lime slice. Fill to top with sparkling water and stir from the bottom up using the bar spoon so the lime, mint leaves and sugar sit all the way through the glass. A strong version but an absolute winner.

- 1/2 lime
- 15 mint leaves
- 1 oz. Bacardi Light Rum
- .5 oz. Cointreau (a brand of triple sec)

- 3 Strawberries
- 3/4 oz. simple syrup or 2 teaspoons of sugar
- 2 oz. white rum

Directions
In a 10 or 12 ounce glass add juice of lime, mint, 2 strawberries and simple syrup. Muddle ingredients. Fill the glass with crushed ice, rum. Cut strawberry into smaller pieces and shake well. Top off with club soda.
